This is a family recipe that was used regularly for a birthday cake
for my oldest brother and I. It's still a favorite in our household. It's popular at work too. I get quite a few requests for it.

Rolled Oats Cake

Preheat oven to 350 degrees

Poor 1 1/4 cup of boiling water over 1 cup of Quick oats.

Cream together:

1/2 cup shortening
1 cup brown sugar
1 cup white sugar

Add:

2 eggs and oats
1 tsp vanilla
1 1/2 cup flour
1 tsp cinnamon
1 tsp baking soda

Bake at 350 degrees for 20 minutes or until done.

In the meantime, prepare the icing.

Cream together:

6 Tblsp melted margarine or butter
1 cup brown sugar
1/4 cup milk
1 cup coconut
1 cup chopped nuts (optional)

Spread on warm cake and return to oven for a few minutes.

Sounds tasty.. Hmm sounds a bit like a recipe for Oat Flapjacks (well we call 'em that, don't know what them called over the pond). They are 1/4 thick shaped shortbread sticks.
